Hendrik Dierendonck, son of the founder of the traditional Belgian butcher's shop, is at the grill and smoker with Laudinella's head chef Steve van Remoortel. Delicious and fair meat from animals of the highest quality from passionate breeders is served.
The Belgian flagship butcher Hendrik Dierendonck is also referred to as a "meat sommelier" who combines today's professional skills with traditional knowledge. He passionately saved the West Flemish Red Cow from extinction and, together with the University of Ghent, he succeeded in reviving the extinct Roman pig breed Menapii (Jurassic Pork). The down-to-earth, likeable Belgian is primarily concerned with the ecological and less with the economic value. So he only sells meat of which he is 100 % convinced.
His philosophy: "Being a butcher is a craft. We combine today's professional skills with the quality of the past."
