Delicious and fair meat from animals of the highest quality from passionate breeders is served. <\/span><\/p>\n<p>The Belgian flagship butcher <a href=\"https:\/\/www.dierendonck.shop\/\" target=\"_blank\" rel=\"noopener noreferrer\">Hendrik Dierendonck<\/a> is also referred to as a &quot;meat sommelier&quot; who combines today&#039;s professional skills with traditional knowledge. He passionately saved the West Flemish Red Cow from extinction and, together with the University of Ghent, he succeeded in reviving the extinct Roman pig breed Menapii (Jurassic Pork).<br \/>\nThe down-to-earth, likeable Belgian is primarily concerned with the ecological and less with the economic value. So he only sells meat of which he is 100 % convinced.<\/p>\n<p><span class=\"t_text\">His philosophy: \u201cBeing a butcher is a craft.
